grandad's granola 

Portions: approx. 30

Preparation Time: 10mins.  

Baking Time: 45mins.

Ingredients:

  • 400g rolled oats

  • 70g nuts (e.g. walnuts, pecans, almonds)

  • 60g seed mix (sunflower, pumpkin, flaxseed)

  • 1 teaspoon cinnamon

  • ½ teaspoon nutmeg

  • 1 teaspoon vanilla

  • 70g dried fruits (raisins, cranberries, dates)

  • 250ml tap water

  • 50ml maple syrup

  • 80g coconut sugar

Possible toppings:

  • 1 tablespoon coconut yoghurt

  • Chopped fruit or berries

Method:

  1. Preheat oven to 150 degrees Celsius.

  2. Blend the nuts of choice in a food processor for 10 seconds until coarsely ground, alternatively chop them with a knife.

  3. Put the ground nuts together with the oats, seeds and spices into a large bowl and stir through.

  4. Heat the water, maple syrup and coconut sugar in a small saucepan for 2-3mins. until sugar dissolves.

  5. Pour the mixture into the bowl with the dry ingredients and stir until the dry mixture is coated.

  6. Spoon mixture evenly into large oven dish and place on medium rack for 45mins. Stir mixture every 10-15mins. to ensure an even bake.

  7. Let mixture cool and store in a large airtight container for up to 2 months.

  8. To serve, add 100ml (or more) plant-based milk and toppings of your choice.
