Preparation Time: 10mins.

Ingredients:

  • 80g rolled oats

  • 150ml plant milk (e.g. oat, almond, cashew or coconut)

  • 100ml water

  • ½ teaspoon per spice: turmeric, cinnamon, cardamom, vanilla, ground ginger

  • 1 tablespoon ground flaxseeds

  • 1 tablespoon chia seeds

  • 1 tablespoon raisins and/or 2 dates for some sweetness

Possible toppings:

  • Grandad's granola

  • Chopped banana

  • Handful of berries

  • Chopped or grated apple

  • 1 teaspoon maple syrup

  • 1 tablespoon almond or peanut butter

  • 1 tablespoon coconut yoghurt

Method:

  1. Pour the porridge oats into a medium sized saucepan and add the plant-milk and water. Stir through.

  2. Turn up the heat to medium and gently simmer for 3mins.               â€‹

  3. Add the spices, chia seeds, flaxseeds and raisins/dates and mix well into the creamy oats. Cook together for another 2mins.

  4. Pour in a bowl and add any of the toppings you like.

Penny recommends:

  • Careful not to overcook the porridge as you want a creamy (non-stodgy) texture so leave some of liquid surrounding the oats as they simmer.

  • As a variation/if you're short on time you can skip cooking the oats and just pour warm or cold milk over the oats & other ingredients directly in a bowl or reusable takeaway container and you're good to go!
