overnight oats

Preparation Time: 5mins.

Ingredients:​

80g rolled oats

150ml plant-based milk (e.g. oat, almond, cashew or coconut)

100ml water
-
1 tablespoon ground flaxseeds
-
1 tablespoon chia seeds

Optional:

1 teaspoon of cacao or matcha powder to flavour the oats
-
1 teaspoon of maple syrup to sweeten
​
Toppings:

Handful of raisins, dried cranberries or chopped dates

Handful of frozen berries
-
1 tablespoon shredded coconut flakes

½ a sliced banana

Sprinkle of pumpkin and/or sunflower seeds

Method:

Find a medium sized jar with a lid on it e.g. leftover nut butter or jam jars

Pour the rolled oats, flaxseeds and chia seeds into the glass jar, and mix together with a spoon.

Add the plant-based milk, water and optional flavourings and stir through well.

Sprinkle with toppings of your choice, put the lid on and store in the fridge overnight.

Making your own Homemade Nut Milk or Oat Milk is preferable as it saves buying the cartons and is also cheaper but you do need a powerful blender (e.g Vitamix) to blitz the nuts.

To save time in the mornings, you could prepare several portions in one go and store in the fridge for a couple days ahead.
