Preparation Time: 5mins.

Ingredients:​

  • 80g rolled oats

  • 150ml plant-based milk (e.g. oat, almond, cashew or coconut)

  • 100ml water

  • 1 tablespoon ground flaxseeds

  • 1 tablespoon chia seeds

​

Optional:

  • 1 teaspoon of cacao or matcha powder to flavour the oats 

  • 1 teaspoon of maple syrup to sweeten 

​

Toppings:

  • Handful of raisins, dried cranberries or chopped dates

  • Handful of frozen berries

  • 1 tablespoon shredded coconut flakes

  • ½ a sliced banana

  • Sprinkle of pumpkin and/or sunflower seeds

​

Method:

  1. Find a medium sized jar with a lid on it e.g. leftover nut butter or jam jars

  2. Pour the rolled oats, flaxseeds and chia seeds into the glass jar, and mix together with a spoon.

  3. Add the plant-based milk, water and optional flavourings and stir through well. 

  4. Sprinkle with toppings of your choice, put the lid on and store in the fridge overnight.

Penny recommends:

  • Making your own Homemade Nut Milk or Oat Milk is preferable as it saves buying the cartons and is also cheaper but you do need a powerful blender (e.g Vitamix) to blitz the nuts.

  • To save time in the mornings, you could prepare several portions in one go and store in the fridge for a couple days ahead.
