tofu scramble


Serves: 4

Preparation Time: 30mins.


  • 300g firm or silken tofu. Firm will be more crumbly & dry while silken will be runnier

  • ½ teaspoon turmeric

  • 1 clove of garlic or 1 teaspoon powder

  • 1 teaspoon smoked paprika

  • 1 tablespoon rice or apple cider vinegar

  • 1 tablespoon tamari

  • 3 tablespoons vegetable broth (make broth per packet instructions)

Optional veggies:

  • ½ chopped onion

  • 3-4 chopped mushrooms

  • 1 small chopped tomato

  • A handful of spinach leaves



  1. Crumble the tofu into small pieces with your hands or fork (not needed if using silken tofu).

  2. Add the veggie broth to a medium sized pan and heat (medium heat).

  3. Add the garlic and any other optional vegetables (onions, mushrooms) and sauté for 4-5mins.

  4. Add the tofu, spices, tamari and vinegar and stir. 

  5. Cook all together for 5mins. season with sale and pepper to taste.

  6. If using tomatoes and spinach stir in at the end for the last 1-2mins. of cooking. 

Penny recommends:

  • Serve on top of toasted vegan wholegrain or sourdough bread.

  • Sprinkle with fresh chives or spring onions.
