almond cookies

Preparation Time: 20mins.

Ingredients:

200g ground almonds*

Grated peel and juice of 1 lemon

5 tablespoons of agave or maple syrup

2 tablespoons tap water

Method:

Preheat oven to 120 degrees Celsius.

Mix all the ingredients in a bowl with your hands until a dough forms (it should not be too crumbly).

Take tablespoon sized portions and shape into round cookies with your hands, roughly 3cm wide and 1cm high.

Lay cookies out on parchment paper or silicone baking mat.

Place in the oven and bake for 10-12 mins.

*You can buy ground almonds or make your own by placing whole almonds in a food processor and blending for about 1 min until you get a very fine powder.
